Sustainability, Recycling and Composting

Our Green Initiative!

In 2012, we spearheaded the catering team for America’s Cup sailing event in Newport.  The America’s Cup committee was very concerned about sustainability, so we learned a lot and continue to follow the practices we learned.  For instance, if you have shrimp in your menu, we only use Pacific White Shrimp, the most sustainable shrimp in the ocean per the Monterey Bay Institute. 

We recycle everything at our commissary and as much as possible at event sites.

All of our paper products are from recycled materials, and disposable flatware is made from corn.  We use bamboo disposable plates and as little plastic as possible.

We compost all food and compostable materials at our kitchen.
